Lemon Blueberry Mug Cake

I’ll be honest. I bought all the ingredients to make a wonderful, picture worthy lemon blueberry pound cake… and then I just got lazy. Or wasn’t feeling it. Or didn’t have the motivation. Or whatever the feeling was… I didn’t want to do it. The feeling I think we can all relate to these days!

But I had lemons and I had blueberries and I had this adorable lemon blueberry apron from ViVi Vitello that I wanted to wear and so… I played around for a bit… and made a Lemon Blueberry Mug Cake. It took me about 5 minutes and I didn’t even have to turn my oven on!

Lemon Blueberry Mug Cake

  • 1 1/2 Tbsp butter

  • 2 Tbsp sugar

  • 1/2 tsp vanilla

  • 2 Tbsp milk

  • 1 Tbsp sour cream

  • 2 Tbsp fresh lemon juice

  • 1/2 tsp baking powder

  • 1/4 cup flour

  • pinch of salt

  • 12-14 fresh blueberries


  • Melt butter in a microwave safe mug.
  • Add sugar and stir until smooth.
  • Add in vanilla, milk, yogurt and lemon juice. Stir until combined.
  • Add baking powder, flour and salt. Stir until combined.
  • Fold in blueberries.
  • Microwave for 3 minutes.
  • Add ice cream, cake icing or powdered sugar for a little extra sweetness… and enjoy!
