
I’ll be honest. I bought all the ingredients to make a wonderful, picture worthy lemon blueberry pound cake… and then I just got lazy. Or wasn’t feeling it. Or didn’t have the motivation. Or whatever the feeling was… I didn’t want to do it. The feeling I think we can all relate to these days!
But I had lemons and I had blueberries and I had this adorable lemon blueberry apron from ViVi Vitello that I wanted to wear and so… I played around for a bit… and made a Lemon Blueberry Mug Cake. It took me about 5 minutes and I didn’t even have to turn my oven on!
Lemon Blueberry Mug Cake

1 1/2 Tbsp butter
2 Tbsp sugar
1/2 tsp vanilla
2 Tbsp milk
1 Tbsp sour cream
2 Tbsp fresh lemon juice
1/2 tsp baking powder
1/4 cup flour
pinch of salt
12-14 fresh blueberries
Directions
- Melt butter in a microwave safe mug.
- Add sugar and stir until smooth.
- Add in vanilla, milk, yogurt and lemon juice. Stir until combined.
- Add baking powder, flour and salt. Stir until combined.
- Fold in blueberries.
- Microwave for 3 minutes.
- Add ice cream, cake icing or powdered sugar for a little extra sweetness… and enjoy!

Lemon Blueberry Mug Cake is cute and easy… just like this apron from ViVi Vitello. I love love love that the top part of the apron is detachable.
